Smoked Tuna Salad
This elevated tuna salad features smoked tuna marinated in dark soy, mirin, and garlic for incredible depth. Mixed with chopped artichoke hearts, crisp celery, red onion, briny capers, fresh parsley, and a kick of serrano pepper. It's perfect for gourmet sandwiches or an elevated salad

In a small bowl combine soy sauce, mirin and garlic and stir to mix

Place tuna in a sealable zipper bag and add the marinade. Remove air and refrigerate for at least 2 hours (overnight is fine too)

Set your smoker for 275ยฐ F and add your tuna. Smoke for 3 hours

Move the tuna over to a preheated BBQ grill and sear until the internal temp on the tuna is 150ยฐ F checked with a thermometer. Cooking hotter will result in dry tuna

Remove the tuna and allow to cool until manageable to handle. It does not need to be fully cooled

Slice the tuna against the grain about 1/2" thick and crumble with your hands into manageable pieces

Add the artichokes, onion, celery, capers, parsley, serrano pepper, mustard, lemon juice and mayo and mix thoroughly

Check for seasoning and add salt and pepper as needed

Cover and refrigerate for at least an hour before use
