In a medium mixing bowl, measure out the 4 oz of smoked Gorgonzola. Reserve about 1/4 of the crumbles for folding in at the end.

With a fork, mash the majority (3/4) of the cold-smoked Gorgonzola into a paste. This helps distribute the smoke flavor evenly throughout the entire dressing base.

Add the mayonnaise, sour cream, and buttermilk to the bowl with the Gorgonzola paste. Whisk vigorously until the mixture is smooth and the cheese is fully integrated.

Stir in the minced garlic, lemon juice, vinegar, Worcestershire sauce, black pepper, and optional Dijon mustard. Mix well.

Check the thickness. If you prefer a thinner dressing (for pouring over greens), add more buttermilk, 1 tablespoon at a time, until the desired consistency is reached.

Gently fold in the remaining reserved quarter of the cold-smoked Gorgonzola crumbles. This ensures you get satisfying chunks of the smoky cheese in every bite.

Taste the dressing and add salt only if necessary. The intensity of the cold-smoked cheese should carry the flavor. Stir in the fresh chives or parsley.
