Instructions

  1. Heat oil/butter in a large non-stick skillet over medium-high heat.
  2. Add the diced onion and bell pepper. Sautรฉ until softened, about 5 minutes.
  3. Add the diced turkey and mashed potatoes to the skillet.
  4. Flatten the mixture into a single layer and let it cook undisturbed for 3-5 minutes until a crispy crust forms on the bottom of the potatoes/turkey.
  5. Stir, season with salt and pepper, and repeat the flattening process, cooking until everything is well-browned and crispy.
  6. While the hash finishes, fry or poach the 4 eggs to your desired doneness.
  7. Divide the hash among 4 plates. Top each serving with a fried egg and a generous drizzle of the warm leftover gravy. Garnish with parsley.

    Tried this for my first time and it was very good. Used turkey from a whole smoked turkey that I had in my freezer. Great flavors but be careful of using too much salt – the smoked turkey I used was a bit salty to start with.
    Definitely will use this recipe again.

      Thanks for the review! ๐Ÿ˜ƒ – Agreed. That’s why i put ‘salt and pepper to taste’. All these holiday meals tend to be salt forward. Part of the reason I use unsalted broth (mine or the stores) to control the sodium. I will always suggest to salt at the end if leftover ingredients are used and already seasoned
