Ham Breakfast Focaccia Sandwich

Preheat a cast iron skillet or pan over medium heat. Melt the butter (or use a small amount of the reserved oil from the tomato jam jar). Place the focaccia slices cut-side down in the pan and toast for 2-3 minutes until golden brown and crispy. Set aside.

Place the ham slices in the hot pan. Increase the heat slightly to medium-high. Sear the ham for 1-2 minutes per side until the edges are caramelized and slightly crispy. Remove the ham and set it aside.

Reduce the heat to medium-low and add a touch more butter or oil if needed.

Crack the egg into the pan. Season lightly with salt and pepper.

Cook the egg until the whites are fully set (about 2-3 minutes).

Just before removing the egg, lay the slice of cheese over it so it begins to melt from the residual heat.

Place the bottom slice of toasted focaccia on your plate.

Liberally spread your homemade Smoked Roma Tomato Jam from edge to edge on the bottom slice.

Place the seared, caramelized ham slices on top of the jam.

Gently slide the warm egg with the melting cheese on top of the ham.

Spread 1 tbsp of mayo on the cut side of the top focaccia slice.
