Instructions

  1. Line a small sheet pan; spray lightly.
  2. Whisk eggs with milk, salt, and pepper. Pour into pan in an even layer on a foil and sprayed 1/4 sheet pan.
  3. Bake at 350ยฐF for 10โ€“12 minutes until just set. Cool slightly, then cut 6 rounds with a biscuit cutter.
  4. Brown ham in a skillet until heated through and caramelized.
  5. Lightly toast English muffins.
  6. Assemble: bottom muffin โ†’ hamโ†’ egg round โ†’ cheese โ†’ top muffin.
  7. Let cool, then wrap each in foil wrapped parchment. Freeze in a zip bag.

FREEZER: 2โ€“3 months / Best within 6โ€“8 weeks
REHEAT: From frozen, remove foil wrap and wrap in a paper towel and microwave one minute at 50% power, then 30โ€‘second bursts on high until the centerโ€™s hot and the cheese is melty
