Line a small sheet pan; spray lightly.

Whisk eggs with milk, salt, and pepper. Pour into pan in an even layer on a foil and sprayed 1/4 sheet pan.

Bake at 350ยฐF for 10โ12 minutes until just set. Cool slightly, then cut 6 rounds with a biscuit cutter.

Brown ham in a skillet until heated through and caramelized.

Lightly toast English muffins.

Assemble: bottom muffin โ hamโ egg round โ cheese โ top muffin.

Let cool, then wrap each in foil wrapped parchment. Freeze in a zip bag.
