Instructions

  1. Parโ€‘cook bacon in a skillet over medium heat 3โ€“4 minutes, just until some fat renders and it starts to firm up but isnโ€™t crisp. Drain on paper towels.
  2. Cut bread into rounds (about 2ยฝโ€“3") if needed.
  3. Wrap 2 strips of parโ€‘cooked bacon around the edge of each bread piece, overlapping and securing ends with a toothpick if necessary.
  4. Heat butter or reserved bacon fat in a skillet over mediumโ€‘low. Add baconโ€‘wrapped bread and cook 3โ€“4 minutes per side until bacon is mostly crisp.
  5. Reduce heat to low. Crack 1 egg into the center of each. Cover and cook 5โ€“7 minutes, until whites are set and yolks at desired doneness.
  6. Remove toothpicks. Brush bacon generously with warm maple syrup and finish with black pepper and chipotle.
  7. Serve hot.
