Whisk all dry ingredients. In a separate bowl beat together milk, yolks, and extract.

Stir together with dry ingredients and let it rest for 10 minutes while you prep the meat.

Shape your four 2.0 oz patties. Make them slightly wider than your rings (about 4 inches).
Cook

Heat a 12" skillet to medium-high. Add sausage patties. Cook for 3โ4 minutes per side until browned and 160ยฐF internal. Pro-tip: Leave a light sheen of the sausage fat in the pan for the eggs. Remove sausage to a plate and keep warm.

In the same skillet, pour your whisked eggs to form a thin, flat layer. Once set (about 90 seconds), fold the edges toward the center to form a square. Cut into 4 equal portions. Set aside.
Buns

Spray your rings with pan spray and heat on a griddle at medium-low.

Pour 1/4 inch of batter into each ring.

Drop 1 tbsp of nuggets into the center.

"Cap" with a final spoonful of batter to hide the nuggets.

Flip when bubbles stay open (approx. 3-4 mins), cook 90 seconds more.
