Instructions

  1. Season roast with Santa Maria rub and smoke at 225ยฐF for 90 minutes.
  2. Vacuum seal smoked roast with garlic whirl and sous vide at 131ยฐF for 3 hours.
  3. Remove from bag and submerge in ice bath for 10 minutes.
  4. Pat dry and sear exterior with a propane torch until mahogany crust forms.
  5. Rest roast for 15 minutes before slicing against the grain.
  6. Serve with chimichurri and Pickapeppa sauces.
