Sweet peas, crisp bacon, and crunchy water chestnuts in a creamy, savory dressing. Pure comfort!
Ingredients
2lbs frozen baby peas, thawed (* See notes below)
3oz sno peas, de-stringed and cut diagonally into 1/3rds
1/3cup red onion, diced 1/4"
1/2lb bacon, cooked crisp, 1/4" chopped
1/2can drained sliced water chestnuts, scup into sticks
1/3cup mayonnaise
1/3cup sour cream
3/4tsp white pepper
3/4tsp kosher salt

Put a double thickness of paper towels on a sheet pan and add the peas single layer on top. Top with additional paper towels and place in the refrigerator overnight to thaw.

Blend together mayonnaise, sour cream, white pepper and salt

Add all ingredients together and toss; check for seasoning.

Refrigerated for at least an hours, tossing again before serving to recoat the peas
Note
Peas can be thawed out on the counter and will be ready in an hour or so. It is critical to remove the excess moisture from the peas or the dressing will just slide off
