Ingredients

4 small slices sandwich bread or 4 rounds cut from larger bread
8 slices bacon
4 large eggs
2 tbsp butter or bacon fat
¼ cup pure maple syrup, warmed
½–1 tsp freshly ground black pepper
Pinch chipotle powder or cayenne (optional)

Instructions

Par‑cook bacon in a skillet over medium heat 3–4 minutes, just until some fat renders and it starts to firm up but isn’t crisp. Drain on paper towels.

Cut bread into rounds (about 2½–3") if needed.

Wrap 2 strips of par‑cooked bacon around the edge of each bread piece, overlapping and securing ends with a toothpick if necessary.

Heat butter or reserved bacon fat in a skillet over medium‑low. Add bacon‑wrapped bread and cook 3–4 minutes per side until bacon is mostly crisp.
