  1. Cook bacon: Render until crispy, reserve 3 tbsp fat
  2. Cold smoke trinity (red potatoes, bell pepper and onion) for 45 minutes
  3. Fry trinity mix in reserved bacon fat.
  4. Season: Add salt, pepper, and smoked paprika
  5. Fry eggs: Cook over easy in separate pan
  6. Assemble: Serve hash over rice, top with fried egg and hollandaise drizzle.
  7. Sprinkle with additional paprika

Note

Dan's Pro Tip: Keep the hollandaise warm in a double boiler if you're nervous about it breaking.
