Instructions
For Seasoning:

Mix jerk seasoning with salt and set aside
For Jerk BBQ Sauce:

Mix all ingredients together and set aside
For Ribs:

Trim the ribs as needed, checking the cut bone edges for any chips, if found, remove

Using a shaker, generously add the jerk seasoning to both sides and edges, allow to set for 20 minutes while setting up the smoker

Fill smoker with applewood and preheat. Once smoking, turn up to 275ยฐF and allow to preheat

Add the rib rack and leave undisturbed for 2 hours

Check the temp of the rack, should be 160-178ยฐF. spray rack with apple cider vinegar to keep it from drying out.

continue to check the temp (and spray as needed) until it reached 195-203ยฐF between the bones

Once at desired temp, pull off to a sheet pan, brush generously with Jerk BBQ sauce and place under a preheated broiler until the sauce bubbles and candies, giving it a sheen to the top (note: do not walk away on this step as the sauce can burn quickly

Note
Cooking to the lower range of 195ยฐF will result in a deeper chew to the rib. Taking up to 203ยฐF and higher will result in softer, fall-off-the-bone rib
