Ingredients

Carolina Honey Rub

1/4 cup paprika
2 Tbsp salt
2 Tbsp white sugar
2 Tbsp honey powder
2 Tbsp ground cumin
2 Tbsp chili powder
2 Tbsp freshly ground black pepper
1 Tbsp cayenne pepper

Chicken

1/2 Chicken
2 tsp Extra Virgin Olive Oil
2 Tbsp Carolina Honey Rub (recipe above)
1/2 cup Cattlemen's Carolina Gold BBQ Sauce

Instructions

Mix all dry rub ingredients together and store in an airtight container

Rub half chicken with olive oil

Coat both surfaces with Carolina honey rub

Place on a sheet pan with a wire rack and refrigerate uncovered for an hour (overnight is even better)

Preheat smoker to 225°F

Pull chicken and place skin side up on the center of the grate and smoke for 1.5-2 hours until it reaches a temperature of 145°F

Increase temperature to 325°F and cook for 15 minutes

Brush both sides with sauce and continue to cook (skin side up) for another 15 minutes so the sauce can set

Pull at 165°F and cover loosely with foil and allow to rest for 10 minutes and then cut and serve
