Crispy Buffalo Wings
Made traditional but with the added inclusion of BBQ sauce to emulsify the sauce. Not a commercial BBQ sauce, they all add a ton of liquid smoke (you don't want that)

Ingredients
CRISPY BAKED WINGS
BUFFALO SAUCE
Instructions
**Adjust oven racks to upper-middle and lower positions. Preheat oven to 250F/120C**

Line a 1/2 sheet baking tray with foil, then place a baking rack on the foil. Spray with pan spray.

Place wings in a large bowl or in a zipper food bag. Add the baking powder and salt, then toss to coat evenly.

Place the wings on the baking tray in a single layer with the skin side up and place on the lower oven rack and bake for 30 minutes.

Move wings up to the upper middle rack and increase the oven temperature to 425F/220C. Bake for 40 – 50 minutes, rotating the tray halfway through.

Remove baking tray from the oven and toss wings in sauce and serve with celery sticks and dressing for dip
BUFFALO SAUCE

Melt butter in a pan.

Add rest of ingredients and whisk together until it starts to bubble.

Pour into a container and allow to cool to room temperature, whisking occasionally to keep the sauce emulsified
