Ingredients

6 oz smoked sliced ham
6 large eggs
⅓ cup milk or half‑and‑half
6 English muffins, split
6 slices sharp cheddar (or Swiss/American)
Salt, pepper, oil or spray for pan

Instructions

Line a small sheet pan; spray lightly.

Whisk eggs with milk, salt, and pepper. Pour into pan in an even layer on a foil and sprayed 1/4 sheet pan.

Bake at 350°F for 10–12 minutes until just set. Cool slightly, then cut 6 rounds with a biscuit cutter.
