Gnocchi & Ham “Green Flash” Hash
This vibrant skillet meal swaps traditional potatoes for pillowy gnocchi, creating a unique texture thatโs soft on the inside with a golden, pan-seared crust. Diced ham or even spicy breakfast sausage provides a salty, wood-fired depth that perfectly balances a bright flash of fire-roasted Anaheim chilis for a pop of color and mild heat. Finished with sautรฉed and seared corn, itโs a fast-paced, high-flavor "brinner" that feels both gourmet and incredibly comforting.

Instructions
-
Heat your skillet with a tiny bit of oil. If using sausage, add the pan and brown while breaking up into crumbles then add the gnocchi. if using ham, add the diced ham and the gnocchi together. You want the ham to get "frizzled" edges and the gnocchi to regain their crunch. Once browned, remove them to a plate.
-
Sautรฉ the red onion and corn in the remaining pan drippings (add a knob of butter if itโs looking dry).
-
Cook until the onions are soft and the corn has some dark golden spots.
-
Fold the gnocchi and ham back into the skillet. Give it one final toss to get everything screaming hot.
-
Fry your eggs in a separate panโSunny Side Up or any soft yolk fried egg is best
-
Plate the hash and top with the fried eggs. Now, sprinkle the diced Anaheim chilis over the very top.
