Gnocchi & Ham “Green Flash” Hash

Instructions

  1. Heat your skillet with a tiny bit of oil. If using sausage, add the pan and brown while breaking up into crumbles then add the gnocchi. if using ham, add the diced ham and the gnocchi together. You want the ham to get "frizzled" edges and the gnocchi to regain their crunch. Once browned, remove them to a plate.
  2. Sautรฉ the red onion and corn in the remaining pan drippings (add a knob of butter if itโ€™s looking dry).
  3. Cook until the onions are soft and the corn has some dark golden spots.
  4. Fold the gnocchi and ham back into the skillet. Give it one final toss to get everything screaming hot.
  5. Fry your eggs in a separate panโ€”Sunny Side Up or any soft yolk fried egg is best
  6. Plate the hash and top with the fried eggs. Now, sprinkle the diced Anaheim chilis over the very top.
