Ingredients

4 cups mashed potatoes, warmed
1 cup cold smoked Cotswold cheese, (or other melting cheese)
1 cup smoked turkey, diced
1/4 cup chives or scallions, sliced
4 large Eggs, scrambled or fried
Hot Sauce, to taste (optional)

Instructions

Dice the smoked turkey and pan-fry it in a small amount of oil until the edges are crispy.

Scramble or fry the 4 eggs.

Place 1 cup of the warm mashed potatoes in the bottom of each of the 4 bowls.

Top the potatoes with 1/4 cup of shredded cheese. The heat from the potatoes should start melting it.

Next, layer on 1/4 cup of the crispy diced turkey.
