Season the Pork Chops with Salt and Black Pepper โ brush with Olive Oil and in a separate pan, sear over high heat until sealed and golden, but not fully cooked yet

In the same pan from the chops, add the butter and melt, then add the garlic and sautรฉ for 30 seconds then add the tomatoes and sautรฉ 3 โ 5 minutes more

Stir in the bay leaves, rosemary, Piri-Piri, wine and sugar โ stir thoroughly, cover and let simmer 10 minutes. Season to taste with salt and black pepper

Transfer the Pork Chops to the Peri-Peri Sauce, cover and cook until done, turning once or twice, about 15 minutes and serve

Finish with 2 fried eggs cooked as you like and your favorite breakfast potatoes
