Description

Rich pesto pasta with savory soppressata and Swiss cheese. A decadent, easy classic

Ingredients
  • 1 lb Favorite Pasta (*see note on options)
  • Extra Virgin Olive Oil as needed
  • 1 cup Basil Pecan Pesto (+more if needed)
  • 2 tsp Morton Kosher salt
  • 3/4 cup 3/4 Soppressata ham cut in 1/4x1/4x1" long sticks
  • 3/4 cup 3/4 Swiss cheese, cut in 1/4x1/4x1" long sticks
  • Fresh Grated Parmigiano Reggiano as garnish
Instructions

    Cook Pasta, following package timing to al dente

    Drain and spread out on a sheet pan, tossing with a little olive oil to keep from sticking

    Allow to cool to the touch
  4. 4
    Add all other ingredients and toss to coat. Use extra pesto if needed. Pesto should fully coat the pasta

    Garnish with parmesan cheese as you see fit

*Use a pasta that does well with thick sauces. Examples could be

  • Fusilli
  • Trottole
  • Radiatore
