In a small saucepan over medium heat, add the oil and sautรฉ the diced onion until translucent, about 3-4 minutes

Add the minced garlic, chili powder, and cumin. Cook for one minute more, stirring constantly, until fragrant

Mix the beans, jalapenos and simmered onions into an aluminum pan and transfer to a 250 degree smoker with your favorite wood for 1 hour, stirring once in the middle of the cook

Season with salt and pepper as needed. If you like a little heat, add a pinch of cayenne pepper

Note
You can also use a combination of fresh peppers and chilis if needed. Add about 1/4 cup of any seeded pepper. Leave the seeds in if you wish for a spicier finish
