  1. Smoke the sausages: Cold smoke at 180ยฐF for 45 minutes with apple wood
  2. Prep the rice: Break up day-old rice clumps with your hands (this is crucial!)
  3. Sear the sausage: Slice smoked sausages into coins, sear in wok/cast iron until crispy edges form
  4. Add onions and continue to cook until starts to go translucent
  5. Scramble eggs: Push sausage to one side, scramble eggs in same pan fat
  6. Fry the rice: Add rice, breaking up any remaining clumps with spatula
  7. Season: Stir in soy sauce, sesame oil, and white parts of green onions
  8. Finish: Garnish with green parts of scallions and serve immediately
