Ingredients
  • 2 cups smoked turkey, diced (white and dark meat)
  • 1 cup mashed potatoes, cold
  • 1/2 cup yellow onion, diced
  • 1/2 cup bell pepper (any color)
  • 2 Tbsp cooking oil or butter
  • salt and black pepper, to taste
  • 4 large eggs
  • 1 cup leftover gravy, warmed
  • 1 Tbsp fresh parsley, chopped

    Heat oil/butter in a large non-stick skillet over medium-high heat.

    Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.

    Add the diced turkey and mashed potatoes to the skillet.

    Flatten the mixture into a single layer and let it cook undisturbed for 3-5 minutes until a crispy crust forms on the bottom of the potatoes/turkey.

    Stir, season with salt and pepper, and repeat the flattening process, cooking until everything is well-browned and crispy.

    While the hash finishes, fry or poach the 4 eggs to your desired doneness.
