Description

This pub-inspired creation merges the distinct herb-and-spice profile of traditional British sausages into a seared, hand-held patty. A dark glaze sets over the meat as it sears, locking in moisture before getting stacked onto rich toasted bread. Layered with sweet caramelized onions, tangy peppers, and a punchy house spread, it delivers a deeply satisfying crossover bite.

Instructions

  1. Mix mayonnaise, sweet pickle relish, 1 Tbsp HP sauce, and Colman's English mustard in a small bowl for the spread, then refrigerate.
  2. Process the skinned bangers in a food processor using short pulses until finely minced.
  3. Whisk 2 Tbsp ketchup and the remaining 2 Tbsp HP sauce together in a separate bowl for the glaze.
  4. Combine minced bangers, ground pork, egg, water, salt, white pepper, sage, and mace in a large bowl by hand until unified.
  5. Divide the mixture into three equal 1/3 lb patties shaped to match the croissant bread slices.
  6. Heat a heavy skillet over medium heat.
  7. Cook patties for 5 minutes on the first side and flip.
  8. Spoon glaze evenly over the seared top of each patty.
  9. Cook for 5 to 6 minutes until the glaze sets and patties reach an internal temperature of 160ยฐF.
  10. Transfer patties to a rack to rest.
  11. Spread sauce on the bottom toasted croissant bread slices.
  12. Top each slice with a butter lettuce, a glazed patty, two Roma tomato slices, 2 Tbsp caramelized onions, 1 Tbsp thick-sliced Mama Lil's goat horn peppers, another layer of spread on the top slice and close.

Note

*If all you can get is lean ground pork, add 1 Tbsp of water to the mix
