  2. Season the tomato slices with Smokehouse AP rub and let them drain briefly.
  3. Toast the Chonga bagel hard until the cut sides are deeply golden.
  4. Spread pimento cheese on the bottom half.
  5. Add the seasoned tomato slices.
  6. Spread the cream cheese thinly on the top half.
  7. Close the sandwich and serve immediately.

  9. Whisk the maple syrup and Sriracha together.
  10. Cook the eggs gently until softly scrambled.
  11. Warm the Canadian bacon and coat it with the Sriracha-maple mixture.
  12. Melt the butter in a skillet. Place the Chonga bagel cut-side down and griddle until toasted.
  13. Build from the bottom: soft scrambled eggs, glazed Canadian bacon, and crisp Bibb lettuce.
  14. Add the top half and serve.

  16. Smash the avocado with lemon juice and Smokehouse AP rub.
  17. Cook the hash brown until thin and deeply crisp.
  18. Toast the cut sides of the Chonga bagel.
  19. Cook the egg over-easy.
  20. Build from the bottom: seasoned smashed avocado, crispy hash brown, raw wild arugula, and the over-easy egg.
  21. Add the top half and serve while hot.
