Pat’s Italian Chili

This massive, slow-simmered pot brings my mom's signature blend of Italian seasonings directly into a deeply rich, traditional bean stew. Heavy layers of browned meats, herbs, and sweet tomatoes meld over hours to create a comforting dish straight from her kitchen.

Instructions

  1. Brown ground beef with onion soup mix. Remove meat to paper towel, leaving 1 Tbsp fat in pan
  2. Add onions and bell pepper to fat and cook until soft. Put in a blender and process smooth. Put in a small bowl.
  3. Wipe out pan and then melt margarine in same pan then sautรฉ garlic, green onions and mushroom, about 4 minutes. Return meat/peppers/onions to pan
  4. Add all other ingredients except for Parmesan cheese to pot. Bring to a simmer 1-2 hours on low
  5. Add parmesan to taste
